It’s a good time to be a Disney foodie, because EPCOT’s Food & Wine Festival has just begun, and The Walt Disney World Swan and Dolphin Food & Wine Classic is just a couple of months away!
Food and Wine Classic
The Food & Wine Classic runs from November 20th through the 21st, from 5 PM to 9 PM each day, and will feature gourmet cuisine from award-winning chefs, paired with fine wines, beers, and spirits from around the world. Disney recently announced that the event will have a brand-new experience this year, and we need to tell you about it!
The Swan and Dolphin Food and Wine Classic will have its first-ever collaborative tasting experience featuring Celebrity Chefs Michael Mina and Todd English. The James Beard Award-winning chefs Michael Mina and Todd English will host the exclusive experience on Saturday, November 21st, from 3:30 – 5 PM for a limited number of guests.

Disney describes the experience as the two chefs working side by side in an interactive setting, taking guests on a “culinary journey via 10 carefully constructed courses, paired with beverage selections from around the world, from Italy to Napa.” The event will combine tasting, storytelling and culinary demonstrations, offering guests a “rare opportunity to hear directly from the chefs about their personal heritage, global travels, culinary philosophies and the dishes that have helped define their careers.”

So what kind of dishes are going to be served? Well, Michael Mina is known for combining technique with bold flavors and influences from his Middle Eastern heritage, as well as decades spent developing acclaimed restaurant concepts around the country. His tasting menu will feature:
- Marinated big-eye tuna with crispy falafel, whipped tahina and Urfa-spiced cucumbers
- Chilled lobster and mango salad with saffron mango sauce, blistered pepper and avocado
- Aleppo grilled poussin with creamy chickpea and orzo koshary
- Triple-seared Wagyu striploin with matbucha and olive oil smashed sweet potatoes
- Basbousa & passionfruit cheesecake with labne, pomegranate and ashta

As for Todd English, he has spent his career exploring flavors from around the world. He has a creative approach to seafood and other dishes that are provided at Disney World. His menu will pay homage to coastal cuisine and the Boston area, featuring:
- Brown butter miso poached lobster with truffled dashi glaze and whipped corn chawanmushi
- Pan-seared Nantucket scallops with fresh pressed apple cider, spiced acorn squash and toasted hazelnut butter
- House-made pastene cacio pepe with duckling confit au poivre and pecorino espuma
- Roasted Chilean sea bass with blood orange glaze, 8-hour roasted fennel, shaved porcini mushroom and shaved fennel slaw
- Roasted red beet chocolate gateau with chocolate beet chips and white chocolate golden beet glace

Throughout the experience, you can expect the two chefs to interact directly with the group while sharing the stories behind their creations and discussing how different aspects have influenced their past and continue to shape their vision for the future of cuisine. It’s going to be an awesome opportunity!
